- 1 c Cilantro
- 1 c Parsley
- 1 Avocado, ripe
- 1 Lime, juiced
- 1 jalapeño pepper
- 1 clove Garlic
- 0.5 tsp Salt, or to taste
- 0.25 tsp cracked pepper
- 1 c oat milk, or other plant-based unsweetened milk, adapt as needed
- 0.333 c cashew nuts
- 1 tbsp Olive oil
- 0.25 c hemp seeds

Blend the sauce
1. Blend the sauce ingredients in a blender.
2. Depending on the size of the avocado, you will need more or less of the plant-based milk.
3. Adjust to your desired consistency.
Cook the pasta
1. Cook pasta al dente and reserve some of the salted cooking water.
Gently heat the sauce
1. Gently heat sauce in a pan and toss pasta in it.
2. Add cooking water as needed.
3. Enjoy!
