Main Ingredients
- 10 chicken legs and thighs
- 2.5 white onions
- 2 Tomatoes, medium, sliced
- 1 tbsp Ginger, chopped
- 1 tbsp Garlic, chopped
- 3 green chili
- 0.5 c Cooking oil
- 1.5 tbsp Kosher salt
- 3 c Sela rice
- 1 l water
Whole Spices
- 1 Star anise
- 1 Cinnamon, small stick
- 1 tsp Coriander seeds
- 3 Cardamom, whole
- 4 Cloves
- 2 Bay leaves
- 1 tsp Cumin seeds
- 2 black cardamom
- 1 tsp Fennel seeds
- 1 tsp pepper corn

Instructions for cooking meat
1. Take a deep pot and add oil and onions.
2. Cook the onion until golden brown.
3. Then add the meat.
4. Once it changes color, add ginger & garlic paste.
5. Cook it for 2-3 minutes as you don’t want to burn the garlic/ ginger.
6. Now add tomatoes and stir for 5 minutes.
7. Add half a cup of water and let the meat completely cook. Should take 20-30 minutes.
Instructions for making a bouquet garni
1. Take a piece of cheesecloth and add everything except pepper and cumin seeds.
2. Tie it with a meat string.
Instructions for cooking rice
1. Now add the bouquet garni to the pot along with bay leaves and pepper corns and cumin seeds.
2. Now add water and bring it to a boil.
3. Then add washed rice.
4. Once the water is 90% absorbed by the rice, cover the pot and let it simmer for 15 minutes.
Instructions for serving
1. Once cooked, fluff the rice.
2. Serve with raita and shami kabab.
3. Enjoy!
