- 1 Bagel
- 1 Egg
- 1 tbsp Olive oil, or butter
- 2 tbsp Cream cheese
- 4 oz smoked salmon
- Capers, for garnishing
- pickled onion
- Fresh dill, and/or chives for garnishing
- Salt, to taste
- Black pepper, to taste

Preparation of the bagel and egg
1. Preheat a griddle or cast iron skillet over medium high heat. Add the olive oil or butter to melt.
2. Slice the bagel in half lengthwise. Place inside-down on the griddle. If needed, use a 1-2” cookie cutter to create a larger center hole in the top bagel slice.
3. Crack the egg into the center of the top bagel slice.
4. Once the bottom bagel slice is toasted and golden, remove from griddle.
5. Either transfer the bagel to the oven at 350F to finish cooking for 4-5 minutes, or flip the bagel with a spatula to finish cooking until desired doneness.
Assembling the bagel
1. Layer the bottom bagel slice with cream cheese, capers, smoked salmon, pickled onions, and fresh herbs.
2. Season the top bagel slice with salt and black pepper to enjoy warm!
