Crab Mixture Ingredients
- 1.5 lbs Dungeness Crab Claw Meat
- 0.5 Tomato, diced
- 0.5 Tsp Garlic powder
- 0.5 Shallot, minced
- 1 Tbsp Fresh Chopped Parsley
- 1 Tsp Lemon zest
- 1 Tbsp Lemon juice
- Salt & Pepper

- Gruyère
- White Cheddar

Directions

Preparing the Dungeness Crab
1. After rinsing off your Dungeness crab legs, peel and crack them open, then toss the crab meat in a large bowl.
2. Make sure to pick through and discard any pieces of shell that may still be in the crab.
3. In the bowl with the crab, add the crab mixture ingredients and gently fold in until mixed well. We want to keep some of the fullness of the crab meat in the mixture (some pieces will be a little shredded).
4. Set bowl aside once mixed.
Preparing the Sandwich
1. Lightly oil or butter one side of the bread slices and place oiled or buttered side down in a large pan on low heat.
2. Using a spatula or your hands, take a handful of the crab mixture and divide it evenly on one of the bread slices then top with the cheese, spreading it evenly over the crab.
3. Top with the other slice of bread (the second top piece of bread should be buttered or oiled for the flip).
4. Lay the sandwich or burger press down on top of the sandwich and cook until the bread browns on the bottom side. You may need to lift the melt up to make sure the bread doesn’t burn. TIP: You don’t necessarily need this sandwich press. You can use another kitchen item or nothing at all. This just helps to press everything together tightly.
5. Once the bottom of the bread is toasted enough for your liking, flip the melt and lay the press down again until the other side is toasted enough and the cheese has melted.
