Ingredients

- 0.5 c Unsalted butter, softened
- 0.5 c light brown sugar, packed
- 0.5 c White sugar
- 1 Large egg
- 0.25 c Cocoa powder
- 1 tsp espresso powder
- 1 oz Dark chocolate, melted
- 1 c Flour, scant
- 0.25 c Cocoa powder
- 0.5 tsp Baking soda
- 0.75 tsp Salt
- 2 oz Dark chocolate, chopped
- 2 oz milk chocolate, chopped
- 2 oz semi sweet chocolate
- 1 oz white chocolate

Directions

1. Cream butter and sugars together for 5 minutes until they’re well combined and creamy.
2. Add the egg and cream again.
3. Then add in the cocoa powder and coffee and cream together.
4. Fold in the flour, baking soda and salt and gently mix (don't over mix).
5. Fold in the chopped chocolate.
6. Cover and refrigerate for 30 minutes.
7. Preheat oven to 360F.
8. Scoop into 12 2 tbsp cookies (May get slightly more or less) onto 2 baking sheets lined with parchment.
9. You can also freeze the cookie dough balls for later use.
10. Bake for 9 minutes.
