Ingredients

For the mangu
- 4 green plantains
- 1.5 tsp Salt
- 6 cup Water, boiling
- 4 Tbs Olive oil
- 0.5 cup Water, at room temperature
- 1 tsp Onion powder
For the eggplant
- 1 Eggplant, cut in batons
- 1 tsp Salt
- 0.33333333333333331 cup Flour
- 1 Egg, beaten
- 0.66666666666666663 cup Bread crumbs
To serve
- 1 Red onion, thinly sliced
- 2 Tbs Apple cider vinegar
- 0.5 cup Water
- 0.5 tsp Salt

Directions

For the mangu
1. Boil the plantain in salted water, until softened. Drain and smash with care while still hot. Add the olive oil, water and mix until you get a smooth puree. Add to the flavor with a pinch of onion powder and salt if necessary
For the eggplant
1. Pre-heat the oven at 200ºC/400ºF.
2. Extend the batons and salt to taste. Coat the eggplant in flour, then with egg, and finally with bread crumbs. Shaking of the excess.
3. Place on a tray with a rack and spray lightly with oil. Bake for 10 minutes or until golden brown and crunchy.
To serve
1. Mix al the ingredients in a bowl and let it rest for 5 minutes.
2. Serve de mangu with the pickled onion and the eggplant.
3. Share and enjoy.
