- 6 lamb chops
- 1 Tbs Garlic, minced
- 2 Tbs green seasoning
- 2 tsp Kosher salt, to taste
- 1 tsp Black pepper
- 1 Tbs Garlic powder
- 2 Tbs Vegetable oil
- 4 Tbs Curry powder
- 0.5 cup fresh tomatoes
- 0.5 cup White onion, diced
- 0.5 cup Hot water, plus 2 cups reserved
- 2 Yukon gold potatoes, diced and cubed

1. Season lamb chops with salt, pepper, garlic powder, onions, minced garlic, and green seasoning.
2. Let marinate for at least an hour.
3. In a large saucepan, heat oil on medium heat.
4. Mix 1/2 cup of hot water with curry powder and stir until it forms a paste.
5. Add curry paste to the pan and cook for 2-3 minutes or until the water dissolves.
6. Add chicken to the mixture and cover entirely. Cook for about 8-10 minutes.
7. Add tomatoes plus enough water to cover the mixture.
8. Cover and let simmer on medium low for about 20 minutes.
9. After 20 minutes, add your potatoes and cook until the potatoes are soft.
10. In a separate frying pan, add a little oil to cover the pan.
11. Sear the lamb chops on both sides for 3-4 minutes developing a crust on both sides.
12. Add the lamb chops to the curry mixture and let cook for 5-7 minutes.
13. Serve immediately.
