Corned Beef Brisket
- 3.5 lbs Corned Beef Brisket
- 1 qt Chicken or Beef stock
- 1 tbsp Pickling Spice
- 0.5 lb Swiss cheese, Sliced thin
- 1 loaf swirl rye
- 1 8 oz can sauerkraut
- Yellow Mustard

1. Place the brisket in the crockpot and add stock until it reaches the top of the corned beef but does not cover it.
2. Add one tablespoon of pickling spice.
3. Cook on high for 5 hours, flipping the brisket once halfway through.
4. Turn off the crockpot and let the brisket cool enough to handle.
5. Wrap the brisket in plastic wrap and let it cool to room temperature on the counter, then place it in the fridge to cool. (At least 2 hours)
1. The plastic wrap keeps the meat tender, while cooling helps to keep it held together. You can skip the wrapping and cooling if desired. I do this to achieve a more deli-type corned beef. If you want to eat it hot right after it cooks in the crockpot, that is perfectly fine!
