Ingredients

- 1 cabbage head
- 1 Tbs Olive oil
- 0.25 Onion, chopped
- 1 cup Lentils, cooked
- 0.75 cup White rice, cooked
- 0.25 tsp Ground cumin
- 0.5 tsp Paprika
- 2 Tbs Mint, washed, disinfected and chopped
- 2 Tbs Cilantro, washed, disinfected and chopped
- pinch salt and pepper
- 2 cup Tomato sauce

Directions

1. Steam the cabbage head; pour a cup of water in a pot, with the cabbage over a steamer. Bring to a boil, lower the heat and put the lid on. Cook for around 20 minutes or until the cabbage leaves come off easily.
2. Heat the olive oil in a pan and add the onion. Cook for a few seconds or until it turns translucent. Add the lentils and rice and let it brown. Season with spices, herbs, salt and pepper.
3. Pre-heat your oven to 180ºC/350ºF.
4. Pour some tomato sauce on the bottom of a baking dish. Tear off the cabbage leaves and cut the stems and any thick part. Stuff a cabbage leaf with 3 tbsp of stuffing. Fold one edge over the stuffing, then the sides to the inside and roll.
5. Place the rolls in the baking dish with the opening facing down and cover with tomato sauce. Bake for an hour or until they soften and they’re hot in the center.
6. Remove from the oven, let them chill for 5 minutes and serve.
Tip:
1. You can replace the rice for quinoa, broken wheat, barley or any grain you like.
