Ingredients

Prepare the Cauliflower
- 1 cauliflower head
- leaves and stem
- cauliflower florets
Rice the Cauliflower
- cauliflower florets
- cauliflower, pulsed until it reaches a rice-like consistency, be careful not to over-process to avoid mushiness
Other Ingredients
- 1 lb Andouille Sausage
- 1 lb Frozen Crawfish Tails
- 1 c Carrots and Peas
- 0.333 c Celery, diced
- 1 bell pepper
- 3 Scallions, diced
- 1 tbsp Olive oil
- 1 tbsp Butter
- 1 Shallot, minced
- 1 tbsp Sesame oil
- 1 tbsp Fish sauce
- 1 tbsp Soy sauce
- 1 tsp MSG
- 8 clove Garlic, minced
- 2 tbsp Ginger, minced
- 1 tbsp gochujang sauce
- 2 tsp creole seasoning

Directions

Prepare the Cauliflower
1. Remove the leaves and stem from the cauliflower.
2. Cut the cauliflower into florets, ensuring they are small enough to fit into the food processor.
Rice the Cauliflower
1. Place the cauliflower florets in the food processor.
2. Pulse the cauliflower until it reaches a rice-like consistency. Be careful not to over-process to avoid mushiness.
Cooking the Ingredients
1. In a large pan, add 1 tbsp butter and olive oil. Cook the Andouille Sausage until browned. Remove the sausage from the pan and set aside.
2. In the same pan, add shallots, bell pepper, celery, and 1 tbsp sesame oil. Stir to combine and allow the vegetables to sauté in the sausage fat and butter.
3. Add minced garlic and ginger. Mix until incorporated.
4. Sprinkle MSG over the mixture.
5. Add carrots and peas, cooking until they are tender.
6. Push the vegetables to one side of the pan and scramble and cook 2 eggs on the empty side.
7. Incorporate 3 cups of cauliflower rice into the pan.
8. Add the cooked sausage back into the pan.
9. Add thawed crawfish tails and mix until well incorporated.
10. Pour in soy sauce, fish sauce, and gochujang sauce. Mix well.
11. Sprinkle creole seasoning over the mixture and stir to combine.
12. Add diced scallions and mix.
13. Serve immediately and enjoy your Creole Cauliflower Fried Rice!
