- 0.5 c Sugar
- 0.5 c water
- 1 tbsp Lemon zest, fresh
- 1 Lemon, juiced
- 1 Ginger, fresh slice or 1 teaspoon ground
- 1.5 c rhubarb
- 1 oz gin, per drink
- 3 oz sparkling wine
- rhubarb curl

For the rhubarb syrup
1. In a large bowl, combine the water and sugar and set over moderate heat.
2. Bring to a simmer and cook until the sugar has dissolved.
3. Remove from heat and stir in the lemon zest, lemon juice, ginger and rhubarb.
4. Return to heat and cook until the rhubarb has softened, about 5 to 10 minutes.
5. Allow to cool.
6. Then pour into a large measuring cup through a fine mesh strainer.
For the cocktails
1. Fill glasses with ice.
2. Then add the gin and 1 ounce of rhubarb syrup to each.
3. Top off with sparkling wine and garnish with rhubarb curl or lemon slice.
4. Enjoy!
