Ingredients

Pasta with Cherry Tomatoes and Arugula
- 300 g Cherry tomatoes
- 1 clove Garlic, minced
- 2 tbsp Olive oil
- 20 g Fresh basil leaves
- salt and pepper, to taste
- 100 g Parmesan cheese, grated
- 100 ml Heavy cream
- 250 g Pasta, of your choice
- 20 g fresh arugula

Directions

Preheat the Oven
1. Preheat your oven to 350°F (180°C).
Roast Cherry Tomatoes
1. Place the cherry tomatoes on a baking tray.
2. Drizzle olive oil over them.
3. Add minced garlic, fresh basil leaves, salt, and pepper.
4. Toss everything together to coat the tomatoes evenly.
5. Cover the tray with foil and bake for 1 hour.
Prepare the Sauce
1. After roasting, transfer the tomatoes to a blender.
2. Add Parmesan cheese, heavy cream, and a bit of pasta cooking water.
3. Blend until you achieve a smooth and creamy consistency.
Simmer the Sauce
1. Pour the blended sauce into a pan and bring it to a simmer.
2. Let it simmer for 2-3 minutes, allowing the flavors to meld.
Cook Pasta
1. Meanwhile, cook your preferred pasta according to the package instructions.
2. Reserve a bit of the pasta cooking water before draining.
Combine Pasta and Sauce
1. Add the cooked pasta to the simmering sauce.
2. Mix everything together until the pasta is well-coated with the creamy tomato sauce.
Add Fresh Arugula and Cherry Tomatoes
1. Toss in fresh arugula and additional cherry tomatoes.
2. Cook for an additional minute, allowing the arugula to wilt slightly.
Serve
1. Plate the creamy roasted cherry tomato pasta.
2. Garnish with extra Parmesan cheese and fresh basil if desired.
