- 2 bread slices
- 8 oz brown mushrooms
- 1 clove Garlic, finely diced
- 1 Lemon, juiced
- 2 tbsp Olive oil
- 0.25 c Cashews, soaked in water or boiled until soft
- 0.25 c oat milk, adjust if needed
- 0.25 tsp Salt, or to taste
- 0.25 tsp cracked pepper
- 0.25 tsp Chili flakes, optional
- 0.5 c Parsley, chopped

To make the cashew cream
1. Blend the soaked cashew nuts with oat milk until you reach a thick and creamy consistency.
2. You can also use a pack of soy or oat cream if you prefer.
To make the mushroom cream
1. Once you have made the cashew cream, heat olive oil in a pan over medium-high heat.
2. Sauté the garlic and mushrooms until cooked and nicely seared.
3. Next, add fresh lemon juice and the cashew cream.
4. Mix everything well and take it off the heat.
To assemble the dish
1. Toast the bread with olive oil in a separate pan until crispy.
2. Top the bread with the mushroom cream, chili flakes, salt, pepper, and chopped parsley.
