- 1 Lemon, juiced
- 1 tsp Salt
- 3 tbsp Olive oil

Boiling the Dandelions
1. Bring a large pot of water to a boil, add the dandelions making sure to submerge them in the water and bring to a boil again.
2. Lower the heat to medium and cook for 30 minutes, stirring a couple times.
Preparing the Cooked Dandelions
1. Remove the dandelions from the liquid and rinse under cold water.
2. Take a handful and squeeze out as much water as you can.
3. Repeat with the remaining cooked dandelion, making them as dry as possible.
Final Preparation and Serving
1. Transfer the squeezed dandelions to a cutting board and cut them into bite sized pieces.
2. Place on a serving dish, add lemon juice, salt and olive oil and stir to combine.
3. Serve warm or cold, with pita bread if desired.
