Ingredients

- 2 lbs Chicken thighs
- 13.5 oz Coconut milk
- 0.25 c Red onion
- 5 clove Garlic
- 0.5 Lime, juiced
- 3 Thai chili’s
- 1 tbsp Fish sauce
- 4 slices of ginger
- 0.5 tbsp Salt
- 0.5 tbsp Pepper
- 0.5 tbsp chicken bouillon powder
- 2 tbsp Garlic powder
- Cilantro, to garnish

Directions

Preparation
1. Preheat oven to 400 degrees.
2. Prep chicken by rinsing, cutting off excess skin or fat & pat dry. (It helps the skin crisp up in the oven)
3. Season chicken with garlic powder, chicken bouillon, salt & pepper.
4. While the chicken is chilling in the seasoning, chop all fresh ingredients.
Cooking
1. Use an oven safe pan, drizzle oil, & cook chicken 4-5 minutes on each side. Skin side down first.
2. Set chicken to the side and add all fresh ingredients: onion, garlic, Thai chilis, & ginger. Sauté for about 1-2 minutes.
3. Add can of coconut milk, fish sauce (to your liking) & fresh lime juice.
4. Put the chicken back in the pan & any remaining coconut milk.
5. Bring the temperature up to a simmer.
6. Then bake chicken for about 25-30 minutes.
Garnishing
1. Garnish with cilantro & enjoy.
