Pie Shell
- 1 pie shell
Sweet Potato Filling
- 2.5 lbs Sweet potatoes, about 3 large potatoes
- 0.75 c Granulated sugar, or brown sugar
- 2 tsp Ginger
- 1 tsp Cinnamon
- 1 tsp Nutmeg
- 2 tsp Vanilla extract
- 2 Eggs
- 1 c evaporated milk

1. Preheat your oven to 375° Fahrenheit.
2. Cook your sweet potatoes either in the oven or microwave.
3. Add your sweet potatoes to a bowl and add in the rest of the ingredients.
4. Use an immersion blender or a hand electric mixer to whip the sweet potato pie ingredients.
5. Add your filling to a prepared pie shell.
6. Use a crust guard to help protect the crust from getting too brown.
7. Bake for 30 minutes or until the sweet potato is puffy and does not jiggle in the middle.
8. Remove your pie from the oven and let it cool before serving.
9. You can eat this pie hot or cold.
10. I recommend adding a dollop of whipped cream. Enjoy!
