Ingredients

Salad
- 1 Kale, bunch, stem removed, finely chopped
- 1 Orange, peeled and cut into slices
- 1 c Red cabbage, shredded
- 2 tbsp pomegranate seeds
- 2 tbsp Pumpkin seeds, toasted
- 2 clove Garlic, thinly sliced
- 1 tbsp Olive oil
- 1 tbsp Apple cider vinegar
- 0.25 tsp Salt
Dressing
- 3 tbsp Orange juice
- 2 tbsp pomegranate juice
- 2 tbsp Olive oil
- 0.25 tsp Salt, or to taste
- 0.25 tsp Pepper, or to taste

Directions

Prepare the kale and red cabbage
1. Massage the kale with 1 tbsp olive oil and 1/2 tbsp apple cider vinegar.
2. Also, massage the red cabbage with salt and apple cider vinegar.
3. Set aside.
Make the garlic chips
1. Heat olive oil in a pan and fry them at a low temperature for about 5 minutes until golden and crispy.
2. Use a strainer to separate the garlic-infused oil (definitely use that later) and dry it on a kitchen paper towel.
Assemble the salad
1. Assemble the salad by using the kale as the base, and top with the marinated red cabbage, the segmented oranges, pomegranate seeds, toasted pumpkin seeds, and garlic chips.
Prepare the dressing
1. For the dressing, simply combine all the ingredients.
2. Toss everything together and serve immediately.
