Ingredients

For the dough
- 1 c whole milk, warmed to 110F
- 1 packet instant dry yeast
- 0.25 c Granulated sugar
- 1 Large egg
- 3 c all-purpose flour
- 0.5 tsp Salt
- 3 tbsp Unsalted butter, softened
For the filling
- 2 tbsp Cinnamon
- 0.5 tsp Nutmeg
- 0.75 c Brown sugar, packed
- 4 tbsp Butter
For Frosting
- 3 c Powdered sugar
- 4 oz Cream cheese, softened
- 4 tbsp Unsalted butter
- 0.5 c Heavy cream

Directions

Preparing the Dough
1. In the bowl of a stand mixer fitted with the dough hook attachment, or a large mixing bowl, add all ingredients EXCEPT the butter.
2. Since you are using instant yeast, there is no need to let the yeast bloom.
3. Mix the dough until a dough ball forms on low speed, then increase to medium speed and knead for 5 minutes.
4. You can knead by hand if you do not have a stand mixer.
5. Add in softened butter and knead on medium-low speed until the dough is smooth, shiny and elastic.
6. You may need to add a little bit more flour if the dough is still sticky.
7. Transfer dough to a lightly greased bowl.
8. Spray top of dough with nonstick spray, then cover with plastic wrap.
9. Allow to sit for 20 minutes or until your dough has doubled in size.
Preparing the Oven and Filling
1. Meanwhile, preheat the oven to 200F.
2. While your dough is rising, let's make the caramel topping and filling.
3. In a medium sized bowl with an electric hand mixer, mix together filling ingredients.
Rolling and Cutting the Dough
1. Once your dough has doubled in size, roll dough on a lightly floured surface into a rectangle.
2. Spread softened butter over the dough.
3. Sprinkle brown sugar mixture over butter and spread evenly.
4. Roll dough, starting at short edge, into a cylinder.
5. Using a sharp knife, cut into rolls.
6. Butter a baking dish and place your cut rolls into the dish.
Rising the Dough
1. Turn your 200° F oven OFF and cover the pan with plastic wrap or a kitchen towel, then place in a preheated oven (plastic wrap’s melting point is 220 to 250 F).
2. This is just to ensure quick rising.
3. Allow dough to rise for 20 minutes, then remove from the oven.
4. Remove plastic wrap, or kitchen towel.
5. To the risen cut rolls, add your cream all over the rolls.
Baking the Rolls
1. Now preheat your oven to 350° F.
2. Once the oven is heated, place your sticky buns into the oven and cook for 20 to 25 minutes until the top is golden brown.
Preparing the Frosting and Serving
1. While your rolls cook, mix together all ingredients for the frosting.
2. Add the milk slowly to get to your desired consistency.
3. Once your cinnamon rolls are golden brown, remove from the oven and let them cool for at least 5 to 10 minutes before adding frosting.
4. Frost your cinnamon rolls.
5. Now you're ready to serve them.
6. Enjoy!
