Peanut Butter Filling
- 1 c creamy all natural peanut butter
- 0.333 c Powdered sugar
Chocolate Cookies
- 1 c Unsalted butter, cold
- 1 c light brown sugar, tightly packed
- 0.5 c Granulated sugar
- 2 Eggs
- 1 tsp Vanilla extract
- 2.667 c Flour, all purpose or gluten free
- 0.5 c Cocoa powder
- 1 tsp Baking soda
- pinch sea salt, optional
- 0.5 c Chocolate chips

1. First, preheat oven to 350 degrees Fahrenheit.
2. Line a baking pan with parchment paper.
Make Peanut Butter Filling
1. Combine creamy peanut butter and powdered sugar in a bowl.
2. Stir until a thick dough is achieved.
3. Roll into ½ inch balls.
4. Place on parchment lined pan.
5. Place pan in freezer.
Make Cookie Dough
1. In the bowl of a stand mixer, add cold butter, brown sugar and white sugar.
2. Beat for 2 to 3 minutes or until no clumps of butter remain.
3. Add in eggs and vanilla extract.
4. Stir to combine.
5. Add in flour, cocoa powder, baking soda and sea salt.
6. Dough will be somewhat thick.
7. Fold in chocolate chips.
8. Remove peanut butter balls from freezer.
Assemble and Bake Cookies
1. Place a flattened ball of cookie dough (about 2 tablespoons worth) and place on parchment lined baking pan.
2. Place a peanut butter ball in the middle.
3. Cover with 1 tablespoon worth of cookie dough.
4. Use fingers to pinch the edges of the dough together, fully enclosing the peanut butter ball.
5. Place at least 3 inches apart on baking pan.
6. Bake for 9 to 10 minutes.
Final Steps
1. Finally, remove from oven.
2. Allow cookies to cool on pan for 5 minutes before carefully removing to a cooling rack.
