Ingredients

Main Ingredients
- 8 ounces bittersweet chocolate
- 0.5 cup Unsalted butter, room temp, cut into pieces
- 6 Large eggs
- 1 cup Sugar
Whipped Cream
- 1.5 cups Heavy cream
- 3 tablespoons Powdered sugar
- 1 teaspoon Vanilla extract
Shaved Chocolate
- 0.25 cup chocolate melting wafers

Directions

Preparation
1. Preheat your oven to 350°F (175°C). Rack in the middle of the oven.
Melting Chocolate and Butter
1. In a steam bath, melt the chocolate.
2. Take it off and then add cubed butter.
3. Mix it well.
Preparing the Base Mix
1. Separate 4 eggs (whites in one bowl, yolks in the melted chocolate/butter one).
2. In the yolk bowl, add additional 2 whole eggs.
3. Whisk it and then add half a cup of sugar.
4. Mix.
Making the Meringue
1. Start beating the egg whites.
2. Once it gets frothy, add half a cup of sugar and continue the process.
3. Once perfectly whipped, gently start folding the meringue into the base mix.
4. Be very gentle or it will all go flat as the air bubbles will diminish with the force.
Baking the Cake
1. Now take a 9 inch spring pan and line it with parchment paper.
2. DO NOT butter or spray the sides.
3. Place it in the oven for 50 minutes.
Finishing Touches
1. Once it comes out, it will be cracked. That’s exactly what you want.
2. Now add the whipping cream and shaved chocolate on top.
