- 1 c cold butter
- 1 c Granulated sugar
- 1 Egg
- 1 Egg yolk
- 1.5 tsp Vanilla extract
- 2.5 c gluten free 1 to 1 flour
- 1 tsp Baking powder
- pinch sea salt

1. First, preheat oven to 350 degrees Fahrenheit.
2. Line a baking sheet with parchment paper.
Mixing Ingredients
1. In the bowl of a stand mixer, add cold butter and sugar.
2. Mix on high for 2 to 3 minutes or until fluffy. There should be no clumps of butter remaining.
3. Then, add in egg, egg yolk and vanilla.
4. Stir to combine.
5. Add all remaining ingredients.
6. Stir to combine.
Baking the Cookies
1. Then, use a cookie scoop to scoop balls of dough onto lined pan.
2. Use hands to slightly flatten each ball of dough.
3. Bake for 10 to 12 minutes or until cookies are lightly golden around the edges.
Cooling and Serving
1. Finally, remove from oven.
2. Allow cookies to cool on pan for 10 minutes before carefully removing to a cooling rack.
