Ingredients

Cilantro-Lime Rice
- 1 c Basmati rice, boiled
- 1 c Cilantro leaves, loosely packed, chopped
- 1 Lime, juiced
Smoky Beans
- 2 c kidney beans
- 1 Onion, finely diced
- 2 clove Garlic, finely diced
- 2 tbsp Tomato paste
- 2 tsp taco seasoning
- 0.5 tsp chili
- 1 tbsp Olive oil
- pinch Salt, to taste
- water, as needed
Fajita Veggies
- 1 Onion
- 0.5 Yellow bell pepper
- 0.5 Green bell pepper
- 0.5 Red bell pepper
- pinch Salt, to taste
- 0.25 tsp Pepper, or to taste
- 1 tbsp Olive oil
Garnish
- 1 Avocado, halved, pit removed, peeled
- 2 Lime wedges
- 0.5 c tomato salsa

Directions

For the cilantro lime rice
1. Cook white rice as usual and then add chopped cilantro and lime juice to taste.
For the red beans
1. Sauté the onion and garlic in olive oil.
2. Add tomato paste, taco seasoning, and chili.
3. Add water if needed.
4. Cook for 5 minutes.
For the fajita veggies
1. Sauté onion and salt together with yellow, red, and green bell peppers in olive oil at low-medium heat for about 35 minutes until very soft.
To assemble the chipotle burrito bowl
1. Assemble your burrito bowl by layering the rice, beans, veggies, and tomato salsa.
2. Garnish with avocado and a lime wedge.
3. Tip: To make the avocado heart, it’s best to look for a pretty round avocado. Otherwise, sliced avocado works just fine.
