- 15 oz Chickpeas
- 0.5 c Rolled oats, Use gluten-free oats if gluten-free.
- 0.25 c Light brown sugar
- 0.5 tsp fine sea salt
- 0.5 tsp Baking soda
- 1 pinch Ground cinnamon
- 0.25 c Maple syrup
- 3 tbsp Oil
- 1 tbsp Vanilla extract
- 1 tsp Apple cider vinegar
- 0.75 c Chocolate chips, Use vegan chocolate if dairy-free or vegan.

1. Preheat your oven to 340°F (180°C) and line a baking sheet with parchment paper.
Making the Cookie Dough
1. Add the chickpeas, oats, light brown sugar, salt, baking soda, cinnamon, maple syrup, oil, vanilla extract, and apple cider vinegar to a food processor or high-powered blender.
2. Process until you get a smooth cookie dough.
3. Stir in the chocolate chips, saving about a ¼ cup to use as garnish.
Baking the Cookies
1. Drop about a tablespoon of chickpea cookie dough onto the parchment paper.
2. Use a wet spoon or wet fingers to flatten the cookie dough, and top with chocolate chips.
3. Bake them in the oven for 20 minutes, and cool completely before eating.
