- 4 Chicken breasts, lightly pounded
- pinch salt and fresh black pepper
- 4 slice Prosciutto
- 4 sage leaves
- 0.5 cup whole-grain wheat flour
- 2 Tbs Olive oil
- 1 Tbs Unsalted butter
- 0.5 cup Sunflower seeds
- 1 Lemon
- 0.33333333333333331 cup White wine

1. Season the chicken breasts with salt and fresh black pepper. Place one slice of prosciutto and 1 sage leaf on top of each breast. Use a toothpick to keep in place.
2. In a large plate, place the flour and lightly coat the chicken with it on both sides.
3. Heat the oil and butter in a pan. Cook the chicken with the prosciutto side down first until it starts to brown; flip it and finish cooking. You can cover with a lid if necessary.
4. Remove the chicken from the pan and keep warm to the side.
5. Add the sunflower seeds to the same pan, stirring constantly until toasted and fragrant. Add lemon zest and juice, followed by white wine to deglaze de pan; cook until you get a thick sauce. Remove from the heat.
6. Serve the saltimbocca with sauce and enjoy.
