Fajita Chicken
- 2 lbs Chicken breasts, boneless skinless
- 1 tbsp Olive oil
- 1 tsp Garlic powder
- 1 tsp Onion powder
- 1 tsp Cumin
- 0.5 tsp Chili powder
- 0.5 tsp chipotle powder
- 1 tbsp Lime juice
Cauliflower Rice
- 4 cups cauliflower rice
- 1 tbsp Olive oil
- pinch sea salt
- 1 tsp Lime juice
- 1 White onion, sliced
- 1 Red pepper, sliced
- Avocado, to garnish
- Salsa, to garnish
- Cilantro, to garnish

Instructions for preparing the chicken
1. First, add the olive oil to a large skillet.
2. Cut the chicken into 1 inch cubes.
3. Once the oil is hot, add in the chicken pieces, garlic powder, onion powder, cumin, chili powder, chipotle powder, and lime juice.
4. Stir until the chicken is well seasoned.
5. Once the chicken is browned on all sides, but not fully cooked through, add the peppers and onions.
6. Cook for 5 to 6 minutes, until the chicken is cooked through and the veggies are softened.
Instructions for preparing the cauliflower rice
1. Meanwhile, add the cauliflower rice, olive oil, sea salt, and lime juice to another skillet.
2. Cook for 3 to 4 minutes, stirring, until warmed through.
Instructions for assembling the bowls
1. Finally, assemble the bowls.
2. Add in the cauliflower rice, topped with chicken, peppers, and onions.
3. Garnish with sliced avocado, salsa, and cilantro.
