- 3 chicken leg quarters
- Cilantro, a bunch
- 1 Carrot, cut in pieces
- 4 Scallions, white ends
- 1 Onion, quartered
- 1 Garlic, whole, peeled
- 2 inches Ginger
- 4 c water
- 1.5 tsp Salt
- 1 tsp Black pepper, whole
- 6 tbsp Corn starch
- 2 tbsp Soy sauce
- 3 Eggs
- Black pepper, ground
- Scallions, sliced
- 1 green chili
- Soy sauce
- Sriracha sauce

1. In a cast iron pot, add chicken quarters, veggies, water, salt and whole pepper.
2. Bring to a boil and let it simmer on a medium low flame for 1 hour.
3. Remove the chicken and discard the veggies.
4. Shred the chicken and place it back in the pot.
5. Add corn starch slurry and let it get completely cooked.
6. Now add soy sauce to your liking.
7. Time to turn off the flame and pour in the beaten eggs.
8. In a circular motion, mix it with chopsticks or a fork.
9. Stop immediately once the egg starts floating.
10. Enjoy hot with your favorite condiments.
