- 8 tbsp Avocado oil, divided
- 3 large chicken breast
- 1 White onion, diced
- 1 Red bell pepper, chopped
- 1 Green bell pepper, chopped
- 1 jalapeno
- 2 tbsp New Mexico chili powder
- 1 tbsp Cumin
- 1 tbsp Onion powder
- 1 tbsp Garlic powder
- 2 tsp poblano chili powder
- 2 tsp Kosher salt
- 2 tsp Pepper
- 1 c Chicken Broth
- 2 cans white chili beans
- 2 cans fire roasted tomatoes
- 1 can Hatch green chilies

Preparation of Chicken
1. In a large stock pot, heat half of the avocado oil to medium heat.
2. While your oil is heating up, season your chicken with salt and pepper.
3. Add your seasoned chicken to heated oil.
4. Cook your chicken and remove from the pot.
Preparation of Vegetables
1. Add the other half of the avocado oil and then your chopped vegetables.
2. Once your vegetables have softened a bit, add your seasonings.
Combining Ingredients
1. Stir your seasonings and then add in your tomatoes, beans, green chilies, and chicken broth.
2. Stir everything together and then add in your chicken.
Stewing and Serving
1. Let your chili stew for about 2 hours on medium heat.
2. Serve it up and enjoy!
