Ingredients

Meat
- 1 lb ground meat
- 2 tsp adobo
- 1 tbsp sazón
- 2 tbsp sofrito
- 0.5 c diced onions and peppers
- 0.5 c Tomato sauce
- 1 tbsp Green olives, pitted (optional)
Bell Peppers
- 4 Bell peppers, any color
Cooked Rice
- 1 c cooked rice
Cheese
- 1 c shredded cheese, mozzarella, cheddar or a mixture

Directions

For the meat
1. In a medium skillet, add the ground beef to high heat.
2. As the meat starts to cook, break up the meat into chunks.
3. Add the adobo, sazón, sofrito, onions, peppers and mix well into the meat.
4. Also add the green olives if using.
5. Cover, and reduce the heat to medium.
6. Allow to cook until the meat turns brown, approximately 10 minutes.
7. Drain excess fat if needed.
8. Add the tomato sauce and allow it to simmer for a minute or two.
9. Just make sure the meat doesn’t burn or stick to the bottom.
10. Remove from heat and enjoy with your favorite dish.
Preparing the peppers
1. Chop the top of the pepper and remove the stem and seeds.
2. Save the tops of the peppers, chop and use as needed in another recipe, or cook into the ground meat.
3. Boil the clean peppers for 10 minutes or until they are tender.
4. Carefully drain and add into a baking dish with the opening facing up.
Stuffing and baking the peppers
1. In a separate bowl, add the cooked ground meat, rice and half of the cheese and mix well.
2. Stuff the peppers with the rice mixture.
3. Top with additional cheese, and bake at 350 F degrees, for approximately 15 minutes.
4. Carefully remove from the oven, and enjoy with your favorite salad or on its own.
