Ingredients

Bread and Mushrooms
- 2 slices Bread, of your choice
- 3.5 oz chanterelle mushrooms
- 1 tbsp Olive oil
- 3 tbsp plant-based cream cheese
- 0.5 c Chives, chopped
- 0.25 tsp Black pepper, cracked
- 0.5 tsp sea salt, coarse
Garlic Confit
- 1 Garlic, head
- 0.5 c Olive oil

Directions

Prepare the garlic confit
1. Cook garlic cloves in olive oil over low heat (the ideal temperature is when you just start to see small bubbles) until they are soft and fragrant. This will take about 20–30 minutes.
2. Use about half of the garlic for two toasts.
3. You’ll also have the best garlic-infused oil, which you can also use in another recipe.
Sauté the chanterelle mushrooms
1. In a hot pan, sauté the chanterelle mushrooms with a bit of olive oil until they are nicely seared.
Prepare the toast
1. Toast your choice of bread.
2. Spread a generous amount of garlic, followed by cheese, on the toast.
3. Dip into the chopped chives.
4. Layer the seared mushrooms on top.
5. Sprinkle with cracked pepper and coarse sea salt, to taste.
