Ingredients

Main Ingredients
- 2 c dry chickpeas
- 2.5 tbsp Salt
- 3 large yellow onions
- 2 tbsp ginger & garlic
- 0.5 c Oil
- 2.5 c sela basmati rice
Whole Spices
- 2 Bay leaf
- 2 Cinnamon sticks, 1 inch
- 1 tsp whole black pepper
- 1 tbsp Cumin seeds
- 1 tbsp Coriander seeds
- 1 Star anise
- 1 mace blade
- 2 black cardamom
- 4 Cloves
- 4 c water

Directions

Soaking and Cooking Chickpeas
1. Soak chickpeas in lukewarm water for up to 4 hours. Overnight is the best option.
2. Then add a tablespoon of salt and cook on medium heat until tender.
3. Set it aside.
Preparing the Rice
1. In a large pot, add oil and once hot, add onions.
2. Fry them until brown.
3. Then add ginger and garlic and cook for a minute.
4. Now throw in the whole spices and rest of the salt. Mix well.
5. Next, add water and bring it to a boil.
6. Finally, add in the rice. Let it soak in water before putting it on low heat to simmer for 20 minutes.
7. Don’t forget to fluff the rice otherwise it becomes a lumpy and sticky mess.
