Blackened Chicken Fajitas
- 2 chicken thighs
- 0.5 red onion
- 1 green bell pepper
- 0.5 tsp salt
- 1 tsp smoked paprika
- 0.5 tsp Garlic powder
- 0.5 tsp onion powder
- 0.25 tsp black pepper
- 0.25 tsp thyme
- 0.25 tsp oregano
- 0.25 tsp cayenne pepper
Mango Salsa
- 0.5 tsp salt
- 1 mango
- 1 lime
- 1 jalapeno
- 1 cilantro bunch

Directions

Preparing the Chicken
1. In a bowl, add the chicken thighs, salt, smoked paprika, garlic powder, onion powder, black pepper, thyme, oregano, and cayenne pepper. Mix thoroughly.
2. Cover and set aside for 10 minutes.
Making the Mango Salsa
1. In another bowl, add your diced mango, lime juice, diced jalapeno, salt, and chopped cilantro. Mix thoroughly and set aside.
Cooking the Chicken
1. On a hot pan, add your chicken thighs and allow to cook for 5-6 minutes.
2. Add your sliced red onions and sliced bell peppers to the same pan.
3. Flip your chicken and allow it to finish cooking for another 6-7 minutes or until the internal temperature reaches 165F.
Serving the Dish
1. Serve immediately and enjoy in a taco, over rice, or as is.
