- 1 small cauliflower
- 2 Tbs Sesame oil
- 2 Egg, beaten with 2 tbsp of water
- 3 clove Garlic, finely chopped
- 1 Onion, diced
- 1 cup Zucchini, finely diced
- 1 cup Carrot, in small half-moon cuts
- 1 cup Red bell pepper, finely diced
- 3 Tbs Low sodium soy sauce
- 3 Tbs Chives, finely chopped

1. In a food processor, pulse the cauliflower until you get a rice texture and place to the side.
2. Heat 1 tsp of sesame oil in a wide pan and cook the egg until it firms up; remove from the fire and place to the side.
3. Add the rest of the oil to the pan and cook the cauliflower rice for 2 minutes. Stir in the rest of the vegetables and sauté for 1 minute. Return the egg to the pan, add the soy sauce; mix well to integrate all the flavors.
4. Serve the yakimeshi hot and garnished with chives.
