- 1 c bell or sweet peppers
- 1 tbsp Sesame oil
- 1 broccoli crown
- 1 c Cashews
- 1 can Chickpeas
- 1 c edamame
- 1 bunch Scallions, finely chopped, separate green parts from white parts
- 0.25 c vegetable broth
- 0.25 c tamari or soy sauce
- 2 clove Garlic, minced
- 0.5 tsp Ginger, grated
- 1.5 tbsp Rice vinegar
- 1.5 tbsp chili garlic sauce/paste
- 1.5 tbsp arrowroot starch
- 1 tsp Maple syrup, This is optional, if your chili garlic sauce is sweet you won't need it.

Heat oil and cook vegetables
1. Heat oil in a skillet over medium heat.
2. Add the white part of the scallions, peppers, and broccoli and cook for 5 minutes.
Prepare and add sauce
1. Whisk together sauce.
2. Add all remaining ingredients to the skillet and pour sauce over skillet.
3. Mix together and simmer for 5-10 more minutes, until the veggies are cooked through.
1. Divide out and serve and top with the green parts of the scallions.
