- 3 ripe plantains
- 0.25 tsp Paprika
- 0.5 c Ground beef, cooked
- 1 c shredded cheese
- cooking oil spray
- salt and pepper, to taste

Directions

1. Peel the plantains, cut a slit down the center and spray and rub them with cooking oil, and sprinkle salt, pepper and paprika to taste.
2. Wrap the plantains in aluminum foil and bake for 30-35 minutes.
3. Remove the plantains from the oven, open the slit, and stuff with the cooked beef.
4. Top with cheese and return to the oven for 5 minutes until the cheese is melted and golden brown.
