Ingredients

Mackerel
- 2 medium Mackerel
- 4 tbsp Oil
- salt and pepper
- 1 small shallot
- 3 clove Garlic, minced
- 2 Tomatoes, diced
- 2 tbsp Fish sauce
- 0.5 tbsp Sugar
- 0.333 tbsp MSG
- Green onions, for garnish
- 2 Thai peppers

Directions

Marinating the Fish
1. Marinate your fish with salt and pepper for at least 30 minutes.
Preparing the Water and Frying the Fish
1. Start to heat a kettle of water to boil while we start to fry the fish.
2. In a large pot, add 4 tbsp oil over medium-high heat.
3. Once hot, fry each piece of fish until golden (approximately 2-3 minutes per side).
4. Remove and set aside.
Preparing the Sauce
1. Using the same oil from the pan, add your minced garlic, shallots, and diced tomato.
2. Allow it to cook until fragrant - 1 min.
3. Add back your fried fish cuts and add enough boiling water to barely cover the fish.
4. Lower the heat to simmer.
Adding the Final Touches
1. Add fish sauce, sugar, MSG, and Thai peppers.
2. Allow the fish to cook on simmer for 60 minutes.
3. Top with sliced green onions and black pepper.
Serving Suggestions
1. Serve this hot with rice.
2. The sauce is AMAZING - don’t waste it and eat it with rice!
