- 0.5 stick Butter
- 3 tbsp Flour, sifted
- 2.5 cups Milk, heated
- 16 oz Cheddar cheese, shredded
- 4 oz Cream cheese, softened
- 1 c rotisserie chicken
- 12 oz Pasta, cooked
- 4 oz Blue cheese, crumbled
- 2 tsp Salt
- Pepper, to taste
- 0.333 c franks red hot buffalo sauce

Prepare the Sauce
1. Melt butter over medium low heat.
2. Sift flour into butter to remove any lumps & whisk until fully incorporated and thick - will look like wet sand.
3. Pour 1/2 of the heated milk into flour & butter mixture, and whisk constantly.
4. Once mixture becomes thick, pour in remaining milk.
5. Continue to whisk the sauce to ensure it doesn't burn or get a coating on top.
6. Once sauce is thickened & coats a wooden spoon like shown, add cream cheese & half of cheddar and mix into sauce until fully incorporated.
7. Add salt & pepper to taste.
8. Pour in buffalo sauce & whisk into sauce until fully mixed - feel free to add more or less depending on your personal spice preference.
Add the Chicken and Pasta
1. Mix in shredded rotisserie chicken.
2. Add Pasta & fold into sauce.
Add the Cheese and Bake
1. Add Blue Cheese Crumbles & gently fold into mac & cheese so it just mixes in but stays intact.
2. If not in an oven safe dish, transfer to one.
3. Top with remaining cheddar & cover.
4. Bake for 20 mins at 400, 10 mins covered, 10 mins uncovered until topping is melted & perfect.
