- 2 Eggs
- 0.25 cup Oil
- 125 g Carrot, grated
- 1 cup Brown sugar
- 1.25 cup Whole wheat flour
- 1 tsp Baking powder
- 0.75 tsp Ground cinnamon

1. Pre-heat your oven to 180ºC/350ºF.
2. In a blender at high-speed, blend the eggs, oil and carrot until homogenous. Add the sugar and keep blending for 1 more minute.
3. In a bowl, mix the flour and cinnamon and baking powder. Pour the liquid mix into the dry mix and whisk until fully incorporated.
4. Pour the mix into a greased and floured cake mold and bake for 40 minutes or until it’s cooked in the center. You can stick a toothpick into the cake and if it comes out clean, it’s cooked.
5. Let it cool and enjoy.
