Ingredients

Blackened Salmon Melt
- 3 c salmon
- 1 tbsp Mayonnaise
- 1 tbsp stone ground dijon mustard
- 0.5 Shallot, diced
- 1 tbsp Chives, diced
- 1 tbsp nonpareil capers
- 1 tsp Lemon zest
- 1 tbsp Fresh lemon juice
- 0.5 large tomato
- gruyère cheese
- tuscan bread

Directions

Preparing the Salmon Mixture
1. In a large mixing bowl, add all of the blackened salmon ingredients and lightly toss until all the ingredients are combined.
2. We want to break up the salmon into chunks.
Preparing the Bread
1. Lightly oil or butter both slices of the bread and place one of the buttered slices down in a large pan over low to medium heat.
Assembling the Sandwich
1. Using a spatula or your hands, take a handful of the salmon mixture and divide it evenly on the bread slice in the pan.
2. Top with the cheese, spreading it evenly over the salmon mixture, and then place the other slice of bread on top.
Cooking the Sandwich
1. Place the sandwich or burger press on top of the sandwich and cook until the bread browns on the bottom side.
2. You may need to lift the melt to make sure the bread doesn’t burn.
3. TIP: You don’t necessarily need this sandwich press. You can use another kitchen item or nothing at all. This just helps to press everything together tightly.
4. Once the bottom of the bread is toasted to your liking, flip the melt and lay the press down again until the other side is toasted enough and the cheese has melted.
