Cake Ingredients
- 2 c All purpose flour, 260g
- 1.5 c Sugar, 330g
- 0.667 c Cocoa powder, 65g
- 2 tsp Baking powder
- 1 tsp Baking soda
- 1 tsp Salt
- 2 Eggs
- 0.667 c Vegetable oil, 120g
- 1 c Milk, 240g
- 0.5 c Ovaltine chocolate powder
- 2 tsp instant coffee
- 0.5 c boiling water, 120g
- 0.5 c Sour cream, 120g
- 1 can Cherries
- 2.5 c chilled heavy cream
- 0.25 c Powdered sugar, 30g
- 75 g Dark chocolate, chopped
- 90 g Heavy cream
- 1 tbsp Oil

Preparation of Cake Pans and Pre-heating Oven
1. Pre-heat oven to 350F, and line 2 9” cake pans.
Whisking Dry Ingredients
1. Whisk together all the dry ingredients except Ovaltine.
Mixing Wet Ingredients
1. In a cup, mix the milk with Ovaltine, and add it along with the eggs and oil to the dry ingredients. Whisk until combined.
Adding Coffee to Batter
1. Mix the boiling water with instant coffee, and then whisk into the batter.
Folding in Sour Cream
1. Lastly, fold in the sour cream to bring it all together. Don’t over mix.
Baking the Cake
1. Divide the batter into 2 pans and bake for 25-30 min (baking time can vary, check after 25 min with a toothpick). Cool cakes on a wire rack.
Preparing Cherries and Cream
1. Take the liquid from the cherries and cook it for 5-7 min until it slightly thickens. Save 10 cherries for décor and chop the rest.
2. Whip heavy cream and powdered sugar to stiff peaks.
Layering the Cake
1. Once the cakes are cooled, trim off the tops, divide into 2 halves each, and layer with cream. Place cherries in the first and third layer. Cover with cream and refrigerate for 2hrs.
Making Ganache and Decorating Cake
1. Make ganache by heating ingredients in the microwave in 20 second increments until shiny. Let cool for 5 min, then drip it onto the cake. Decorate with cherries.
