Beef Tri Tip
- 2.5 lb Beef Tri Tip
- 4 tbsp EVOO
- 5 Garlic cloves
- Rosemary Sprigs
- Kosher salt
- Pepper
- 6 tbsp Butter

1. Preheat your oven to 400 F.
2. While your oven is heating, place your cast iron skillet in the oven, so that it can get hot as well.
3. Score your Tri Tip in the pattern according to the video. This pattern of cutting will ensure that when you cut into the meat it will be tender.
4. Season your tri tip with salt, pepper, and EVOO.
5. Rub the oil and seasonings all over the meat.
6. Add your skillet to the stove top and set it to medium high heat.
7. Add your Tri Tip to the skillet.
8. Sear it on both sides.
9. While you're searing your meat, heat your butter in a small saucepan.
10. As your butter is melting, add garlic and rosemary.
11. Swirl for 2-3 minutes so that the butter can get infused.
12. Once the meat is seared on both sides, drizzle the garlic butter all over the meat.
13. Baste in the skillet for 2-3 minutes and then place your meat in the oven.
14. Cook your meat until it is to your desired doneness. If you are looking for a medium, the temperature should be 140 F.
15. Let your Tri Tip rest for 15 minutes before slicing.
