- 1.5 c all-purpose flour
- 1 tsp Baking powder
- 1 tsp Baking soda
- 0.5 tsp Salt
- 0.5 tsp Cinnamon
- 3 Bananas, large ripe, about 1 1/2 cups mashed
- 2 Eggs, large, at room temperature
- 0.5 c light brown sugar, packed
- 4 tbsp Unsalted butter, melted
- 1 tsp Vanilla extract
- 1 c Walnuts, chopped

1. Preheat the oven to 350°F. Line a 12-count muffin pan with cupcake liners.
Mixing Dry Ingredients
1. In a medium bowl, whisk the flour, baking powder, baking soda, salt and cinnamon. Set aside.
Mixing Wet Ingredients
1. In a large bowl, mash the bananas. Whisk in the eggs, brown sugar, melted butter and vanilla.
Combining Ingredients
1. Pour the dry ingredients on top of the wet ingredients and continue to whisk until combined. Fold in the chopped walnuts.
1. Pour the batter into the prepared muffin pan and bake for 18-20 minutes or until a toothpick comes out clean.
