Ingredients

- 1 pint Cherry tomatoes
- 0.25 c Green olives, sliced
- 4 clove Garlic, unpeeled
- 0.25 c red onions
- 3 tbsp Extra virgin olive oil
- 1 8 oz block @RothCheese Chèvre
- 0.25 tsp crushed red pepper
- Fresh basil, for garnish
- rosemary crackers

Directions

1. Preheat oven to 400°F.
2. In an oven safe dish, place the cherry tomatoes, olives, garlic, red onions and olive oil.
3. Season with salt and pepper and toss until well combined.
4. Place the Chèvre goat cheese block in the middle of the baking dish surrounded by all the vegetables.
5. Add the crushed red pepper on top of the Chèvre.
6. Bake in the preheated oven for 30 minutes, until the cherry tomatoes burst, and the Chèvre melts.
7. Add fresh basil leaves and serve with crackers.
