Main Ingredients
- 1 Cucumber, small, peeled and seeded
- 1 Avocado, ripe, seeded and cubed
- 100 g edamame beans
- 1 handful Baby spinach, chopped
- Sesame seeds, to garnish
Sauce
- 1 clove Garlic
- 0.5 tsp chili oil
- 1 tbsp Soy sauce
- 1 tbsp Sesame oil
- 1 tsp Honey, or agave nectar

Directions

Prepare your sauce
1. Press a clove of garlic in a bowl and add the chili oil, soy sauce, sesame oil, and honey, and mix well.
Prepare the vegetables
1. Cut the cucumber along the long side in half, then scoop out the seeds.
2. Cut both halves into 0.5cm thick slices.
3. Cut avocado into cubes, and roughly chop baby spinach.
Assemble the salad
1. Add all veggies into a bowl, pour dressing over, and enjoy!
