- 2 c long grain rice
- 6 c water
- 1 cinnamon stick
- Cloves, a few
- 4.5 c whole milk
- 1 c Granulated sugar
- 1 tsp Vanilla extract, optional
- Ground cinnamon, to taste

Preparing the Rice
1. Place the rinsed rice in a large pot with the six cups of water, the cinnamon pieces and cloves.
2. Set over moderate heat and bring to a simmer.
3. Cook until the rice has softened and most of the liquid has absorbed.
Warming the Milk
1. Warm the milk in a small saucepan until just barely simmering. Do not boil.
Finalizing the Pudding
1. Stir the milk into the cooked rice and add the sugar.
2. Cook, stirring often, until the pudding has thickened.
3. Remove from the heat and discard the cinnamon pieces and cloves.
4. Stir in the vanilla if using.
5. Enjoy warm or chill until ready to serve.
6. Top with ground cinnamon right before eating.
