Garlic Fried Rice
- 2 c day old rice
- 1 tbsp Garlic, minced
- 2 clove black garlic
- whole garlic cloves
- Neutral oil, as needed
- Salt, to taste
- White pepper, to taste

Make the garlic confit
1. First, make the garlic confit ahead of time. You can do this the day before.
2. Cook the whole garlic cloves in neutral oil on medium low heat for approximately 1 hour or until the garlic is soft.
3. The garlic should not have much color on it after cooking.
4. Cool down and store the garlic in the oil in a container.
Prep the ingredients
1. Prep the minced garlic, and black garlic slices and set aside.
Prepare the rice
1. Starting in a cold pan or wok, add about 2-3 tablespoons of the garlic confit oil, along with the minced garlic.
2. Now turn on the heat to medium low and cook until it is lightly toasted.
3. Immediately add the day old rice and mix well.
4. Also, break up any clumps of rice during this step.
5. Now add about half the black garlic slices, and season with the salt and white pepper.
6. Mix well and cook until the rice is thoroughly heated.
Plate and serve
1. Plate the rice into a bowl.
2. Top it with the remaining black garlic and a few cloves of the garlic confit.
3. Best served warm with fried eggs and Filipino breakfast meats.
