Melted Ice Cream
- 0.5 c Ice cream, melted
Glutinous Rice Flour
- 0.5 c glutinous rice flour
- Ice cream, For filling

Preparation of Ice Cream
1. Scoop out your favorite ice cream (I used caramel and praline flavored ice cream) into a cupcake liner.
2. Freeze until it is rock hard.
Making the Mochi
1. Melt some ice cream and add 1/2 cup of it into a bowl.
2. Add the glutinous rice flour and mix until combined.
3. Filter and transfer to a pan.
4. Mix and cook on medium heat until soft dough is formed.
5. Let it cool a bit. Use hand gloves and knead the mochi until stretchy.
6. Sprinkle glutinous rice flour/corn starch and flatten the mochi.
Assembling the Ice Cream Mochi
1. Add the frozen ice cream in the middle and cover with the mochi. Pinch it together and cut off the excess.
2. Apply glutinous rice flour/corn starch to prevent sticking. Freeze for 30 minutes.
3. Enjoy!
