Ingredients

Yellow Cherry Tomato Sauce
- 300 g yellow cherry tomatoes
- 1 whole head of garlic
- 5 g Fresh basil leaves
- 2 tbsp Extra virgin olive oil
- salt and pepper, to taste
Creamy Parmesan Sauce
- 100 g Parmesan cheese, grated
- 100 ml Heavy cream
- 1 c pasta cooking water
Spinach Fresh Pasta
- 50 g Spinach
- 250 g all-purpose flour
- 1 Egg
- 65 ml spinach water
Garnish
- 20 g additional Parmesan cheese
- 30 g Fresh herbs, for garnish (e.g., basil or parsley)

Directions

Yellow Cherry Tomato Sauce
1. Preheat the oven to 180°C (350°F).
2. In a baking pan, combine yellow cherry tomatoes, whole garlic cloves, fresh basil leaves, and a generous drizzle of extra virgin olive oil. Season with salt and pepper.
3. Cover the pan and bake in the preheated oven for 40 minutes.
Creamy Parmesan Sauce
1. Once the tomatoes are roasted, squeeze out the roasted garlic from the cloves.
2. In a blender, combine the roasted tomatoes, roasted garlic, grated Parmesan cheese, heavy cream, and a bit of pasta cooking water.
3. Blend until smooth.
4. Pour the sauce into a pan and simmer for 5 minutes.
Spinach Fresh Pasta
1. Blanch a large handful of spinach in boiling water for a few minutes.
2. Blend the blanched spinach with water to create spinach water.
3. In a mixing bowl, combine all-purpose flour, an egg, and 65 ml of spinach water. Mix until a dough forms.
4. Use a pasta machine or roll out the dough by hand, then cut into your desired pasta shape.
5. Cook the fresh pasta in salted boiling water for 2-3 minutes or until al dente.
Assembly
1. Drain the cooked spinach fresh pasta and add it to the pan with the creamy Parmesan sauce.
2. Toss the pasta until it is well-coated in the sauce.
3. Sprinkle additional Parmesan cheese on top.
4. Garnish with fresh herbs, such as basil or parsley.
