Ingredients

Main Ingredients
- 2 Golden Pompano
- 1 bundle Green onions, sliced into 1" pieces
- 2 Thai chilis
- 12 tbsp Fish sauce
- 2.5 tbsp Sugar
- 1.5 tsp MSG
- 1 tbsp chicken bouillon
- 8 oz pineapple chunks
- 3 stalks Celery, sliced into 1" pieces
- 3 Tomatoes, sliced into fourths

Directions

Prepare the Golden Pompanos
1. Clean, gut, and slice your Golden Pompanos in half vertically.
2. Set aside.
Prepare the Pot
1. Fill a 6 qt pot with water about 3/4 full and set on high heat.
Prepare the Sauce
1. While waiting for the water to boil, in a mortar, smash the whites of the green onions and Thai chilis.
2. Then add fish sauce, sugar, MSG.
3. Mix well.
Cook the Fish
1. When the water boils, add the Golden Pompanos and sauce mixture from the mortar.
2. Allow the fish to cook for 15 minutes.
Add the Vegetables
1. Then add your celery, tomato, and pineapple chunks to the soup.
2. Allow to cook for an additional 5 minutes.
Final Seasoning
1. Add your chicken bouillon and do final seasoning (add additional fish sauce, sugar as needed).
Serve
1. Serve hot with hot rice.
