- 10 oz yu choy
- 6 cups water
- 2 clove Garlic, minced
- 1 Shallot, minced
- 1 tbsp chicken powder
- 1 tbsp Fish sauce
- 0.5 tsp Salt
- 0.5 tsp Sugar
- Black pepper
- 2 tbsp Cooking oil
- 0.25 lb Ground pork

Preparation of Yu Choy/Cai Ngot
1. Start by washing and trimming your Yu Choy/Cai Ngot greens.
2. Set aside.
Preparing the Soup Base
1. In a 6 qt pot, heat 2 tbsp of oil over medium high heat.
2. Once hot, add minced shallots and minced garlic.
3. Sauté for 30 seconds.
4. Add your ground pork and gently break apart.
5. Add a sprinkle of salt.
6. Sauté for 2 minutes.
Adding Water and Skimming Foam
1. Add 6 cups of water and wait for it to reach a boil - should take about 6 minutes.
2. Start skimming the foam at the top and discard foam.
Adding Greens and Seasoning
1. Add the Yu Choy/Cai Ngot to the soup.
2. Gently stir so all greens get cooked in the soup.
3. Season with chicken powder, fish sauce, salt, sugar, and black pepper.
4. Taste and adjust to your liking.
Serving the Soup
1. Turn off the stove and serve this with hot rice.
