- 14.1 oz Banh Xeo batter mix
- 1 lb Shrimp, deveined, halved
- 1 lb pork shoulder/butt
- 1 large white onion
- 14 oz Coconut milk
- 3 c water
- 3 Green onions, sliced
- Beansprouts
- Vietnamese herbs
- Lettuce

Prepare the Batter
1. In a big mixing bowl, combine Banh Xeo batter, coconut milk and water.
2. Stir until fully combined.
3. Add green onions.
4. Set aside.
Prepare the Toppings
1. Prep your topping ingredients.
2. Slice your pork shoulder.
3. Clean and halve your shrimps.
4. Slice your white onions.
Cook the Pancakes
1. In a wide pan or wok, add 2 tbsp oil over medium high heat.
2. Add few slices of white onion, 2-3 shrimps, and 3-4 slices of pork.
3. Sauté until pork is 80% cooked (about 5 mins).
4. Ladle in the batter until pan is fully covered with a thin layer.
5. Add a handful of bean sprouts and cover the pan.
6. Allow to steam for 2 mins.
7. Remove the lid and allow the batter to keep cooking and crisp up - another 1-2 mins.
8. Check the bottom of the pancake to ensure it’s not burnt.
9. Then flip one half of the pancake to close.
10. Remove from heat and repeat the process for the remainder of the pancakes.
Serve the Pancakes
1. Serve the pancakes with fresh Vietnamese herbs, lettuce and Vietnamese sweet fish sauce dip (Nuoc Mam Cham).
